food i made.

part of the reason i started this blog was so that i would have motivation to document and record more of the food i make. because i often just make up recipes and they're pretty good, and i'm also trying to get into the habit of photographing more of my food. maybe someone will happen to read these and ask me for the recipe, or prod me to take more photos.

so here's something i made yesterday. didn't take a photo, but here's the info.

Vegetable Enchiladas w/Spicy Chipotle-Tomato Sauce:
Organic Yellow Corn Tortillas
Sauteed Swiss Chard w/Garlic
Broiled Zucchini w/garlic and oregano
Broiled Sweet Potatoes w/garlic, cumin, and cilantro
Broiled Chayote and Red Peppers w/coriander and thyme
Caramelized Onions

Chipotle-Tomato Sauce:
1 Yellow Onion + Garlic + Thyme + Cumin + 1-2 Chopped Chipotle in Adobo + 1 Large Can Diced Fire Roasted Tomatoes + chopped Cilantro
Puree half of it, stir, and pour all on top of enchiladas
I should have made twice as much. or at least 50% more. The enchiladas could have used a bit more saucy lovin'.


Also made: Avocado-Pineapple-Hearts of Palm Chunky Salsa
w/halved grape tomatoes, diced red onion, chopped cilantro, salt, fresh lime juice
could have also added more onion or minced jalepeno to make the heat factor more exciting.
this would go great with fish or grilled chicken. also good with chips and enchiladas.
